Mesquite Chicken and Avocado Salad


- 10 150 Chicken supreme
- 2 tbsp
- 6 Little gem lettuce (prepared)
- 200 grams Rocket
- 1 Red onion (finely diced)
- 1 kg Cherry tomatoes
- 5 Avocadoes (Stoned, peeled and sliced)
- 175 ml Caesar Dressing
- 200 grams Croutons


Place chicken supreme on an oiled baking tray and sprinkle the Schwartz for chef Smoky Mesquite BBQ seasoning, leave for 20 minutes. Place in a medium over and cook for 10-15 minutes or until juices run clear.

Meanwhile, mix together the little gem lettuce, rocket and diced onion and arrange on a plate.

Mix together the avocados and cherry tomatoes with the Schwartz for Chef Caesar dressing.

Once the chicken is cooked, allow to rest for 5 minutes, slice and place on the salad. Place the avocado and tomatoes on top.
