Chicken and Mango Salad


- 10x150 grams chargrilled chicken breasts
- 1 kg baby spinach, washed and stalks removed
- 450 grams lambs lettuce
- 2 ripe, mangos, skinned and diced
- 500 grams cherry tomatoes
- 150 grams smoked bacon, cooked
- For the Dressing
- 150 ml olive oil
- 75 ml sunflower oil
- 45 ml orange juice
- 4 tbsp Coriander leaf
- 1 tsp Ground Ginger
- 1 tsp caster sugar


Blend together the olive oil and sunflower oil.

Add the orange juice, Schwartz Coriander leaf, Schwartz Ground Ginger and caster sugar and blend.

Place the baby spinach and lambs lettuce in to a bowl. Add the cherry tomatoes, diced mango and toss with the orange and ginger dressing.

Slice the chicken breast, place on the leaves and serve.
