Tex-Mex Salmon steak with Onions and Peppers

- 4 salmon steak portions
- 2 onions – sliced
- 1 green pepper – sliced
- 1 red pepper – sliced
- 2 garlic cloves - crushed
- 2 tbsp Fajita Seasoning
- 2 tbsp vegetable oil


Mix the sliced onions, peppers and garlic together with half the oil and fajita seasoning.

Fry in a pan on medium heat without colour until tender.

In a separate pan cook the salmon in the remaining oil.

Sprinkle the remaining Fajita seasoning over the salmon halfway through cooking.

Serve immediately with the onions and peppers and a wedge of lime.
