Spices can create a comforting seafood dish

Coriander is great with fish

One of the many benefits culinary spices can offer professional caterers is that they can bring a distinctive flavour to almost any dish.

Our resident expert Chef Steve says that this versatility is one of his favourite things about these ingredients.

Author of the Jerusalem cookbook Yotam Ottolenghi suggested extensive use of spices in his recipe for cod cakes in tomato sauce.

In an article for the Guardian, he explained that the addition of things like coriander, cumin and paprika to the sauce can create a sweet and slightly sharp taste.

Ottolenghi added that they "capture much of the spirit of Sephardi food", adding that: "They are delicate, almost brittle, very comforting and popular among Syrian Jews."

Researching other culinary cultures is always a great way to get new recipe ideas for your restaurant's menu - but don't be afraid to adapt these ingredients to come up with a taste sensation of your own invention.
