Rub a duck with herbs

Duck can be roasted with herbs

Culinary herbs can really bring something completely new to a dish - and this can be particularly beneficial to tried and tested traditional favourites.

Our resident expert Chef Steve says the scope the ingredients offer for doing this is one of his favourite things about them.

In an article for the Daily Telegraph, celebrity chef Rose Prince recommended rubbing duck with a range of herbs.

Cinnamon and juniper berries were included in her ingredients - as well as rosemary and thyme.

She also suggested the use of a quince paste for serving - although she added that it can be very sweet, so it may be advisable to offset this with a squeeze of lemon juice.
