Pickle condiments in spices

Pickle some fruit to serve with a roast meal

Roast dinners are a popular staple with diners up and down the country - and it is obvious that they are a classic national tradition.

However, it would be a good idea for caterers to try and think of some of the ways in which they might be able to add something to their restaurant's offerings and set them apart from the crowd.

In an article for the Daily Telegraph, celebrity chef Rose Prince suggested pickling pears in sloe syrup.

She claimed this could be a great way to add an accompaniment to meat dishes like hot roast ham or game.

Vanilla pods were included in her ingredients - but creative chefs could always come up with their own mixture.

Culinary spices could be a great way to do this, as they can really accentuate the natural flavour of other ingredients when used effectively - indeed, the method is very similar to preparing a marinade.
