Langoustines can be served with a spicy dipping sauce

Dipping sauce is not to be overlooked

Seafood recipes are often accompanied by a dipping sauce - and it could really pay off for culinary professionals to give some careful consideration to how they intend to go about creating these.

Coming up with exciting new flavour pairings could lead to the development of something truly distinctive that could keep your diners coming back for more.

In an article for the Daily Telegraph, Stevie Parle recommended a hot and sweet dipping sauce to go with poached langoustines.

He suggested using prawns instead if langoustines prove difficult to source - and his dipping sauce recipe includes ginger and garlic, as well as a green chilli.

Herbs and spices are the ideal ingredient for this kind of dish - as they are almost infinitely adaptable and can bring something new to almost any meal.
