Chilli and coriander is a good flavour pairing

Chillies are highly versatile

Steve Waters, co-founder of Southdevonchillifarm, has suggested that coriander and chilli could make the perfect flavour pairing.

He added that this is particularly the case for caterers who wish to create a dip or a guacamole - and this could be the ideal option for restaurants that offer a tapas menu.

Our resident expert Chef Steve says coming up with new flavours by bringing new combinations of herbs and spices together is one of his favourite things about working in kitchens.

Mr Waters said chillies are also very well suited to serving a stuffed pepper as a main course.

He specified that the poblano variety of chilli would be perfectly suited to this purpose, as it offers a little bit of heat.

"Grill it... so it's blistered all over [for] quarter of an hour in a plastic bag to sweat, once they've cooled down, peel the skin off and that will increase the flavour," the expert commented.
