Spices are great in baklava

Researching the culinary traditions of other cultures is one of the best ways for professional caterers to come up with new delights for their restaurant's menu offerings.

Indeed, our resident expert Chef Steve says that this is one of his key professional inspirations - underlining the importance of always keeping things fresh.

Specialist in British and Greek cuisine Maria Ella has recommended the use of culinary spices like cinnamon in a recipe for a tomato, feta, almond and date baklava.

In an article for the Independent, she also suggested the inclusion of herbs such a dill and garlic - and emphasised the importance of creativity in the kitchen.

"I always like to think outside the box and I find that once I do this, a whole new culinary world opens up before me," the expert remarked.

Caterers can follow her lead and adapt this recipe with new flavour pairings of their own invention.
