Garlic and basil flavour a tomato and cream soup recipe

Herbs are added to a tasty tomato soup recipe

Chefs looking for new ways to use culinary herbs in their recipes may want to try making some warming winter soups.

In an article for the Daily Telegraph, food writer and journalist Rose Prince explained how to make tomato and clotted cream soup.

To begin, garlic, olive oil and basil are boiled in a large pan along with both fresh and tinned tomatoes.

Sugar and either stock or water are added and the mixture is left to simmer before being liquidised in a food processor.

Cream is added and the soup should be reheated, although not brought to the boil, Ms Prince continued, recommending that salt and black pepper can be included for extra seasoning.

She described soup as a "sustaining food" that is perfect for all seasons - and chefs could agree this tomato recipe is perfect for autumn.

"I like ice-cold green vegetable soups, straight from the fridge and as refreshing as white wine; in winter, great bowls of broth with chunky toast," the expert stated.
