Chinese Five Spice in 5 star restaurants sweet recipe

5 star restaurants banana tarte tatin

Chefs attempting to incorporate culinary spices into a pudding recipe may wish to try a banana tarte tatin.

The dish comes from the Royal Horseguards, a five-star hotel situated by London's Thames and was shared with the Telegraph by Joanne Todd, head pastry chef for the venue.

A pinch of Chinese five-spice seasoning was a recommended ingredient.

She advised gently cooking sugar, whisking the result in cubed butter until it becomes a thick caramel sauce.

Pour the mixture into a tin, she suggested, before placing lengthways-cut bananas evenly spread in the sauce.

Ms Todd said that laying pastry over the tin and cutting around the bananas would make them easier to remove after cooking.

After leaving in the oven for 25 minutes, her serving tip was to leave to cool so the caramel can soften, using the juices as an extra sauce with ice cream or clotted cream.

The Royal Horseguards recently won the AA London Hotel of the Year award for 2010-11.
