Chefs must be passionate

A Canadian celebrity chef who favours using culinary herbs and spices has offered advice to chefs looking to break in to the industry.

Dale MacKay, who recently won the Top Chef Canada TV show, told the Vancouver Sun that a love for working with food is essential.

He described cooking as "a job of passion" and noted successful chefs must "have talent technique" along with the willingness to work long hours.

A can-do attitude is also necessary, MacKay said, noting that when he was working for Gordon Ramsay he had very little culinary experience, but went in to the job with the attitude that he would "go and outwork and outcook everyone".

He will be using his personal five-spice and barbeque spice mixes at his new restaurant and Chinese five-spice seasoning was recently recommended as an ingredient in a banana tarte tatin dessert created by the Royal Horseguards, a five-star hotel situated by London's River Thames.

Head pastry chef at the venue Joanne Todd told the Telegraph said the dish is best served cool.
