Celebrity chef manifest outlines social duty

Heston Blumenthal and others have issued a chefs manifesto

Cooks of creative cuisine have been directly addressed by some of the world's top chefs, including Heston Blumenthal.

An Open Letter to the Chefs of Tomorrow was issued as part of the G9 meeting in Lima, Peru.

The nine signatories of the letter are all members of the International Advisory Board of the Basque Culinary Centre and their manifesto outlined responsibilities to society and ethics.

Professionally, chefs have can have a social-economic impact through cultural exports and collaborating with local producers for sustainable growth, they stated.

In addition, they can "serve as an important bridge with other cultures", the letter read.

Self-expression is one of the values of cooking, they added, noting that as the field is constantly evolving, it is important to be guided by individual ethics.

Since 2005, three of the nine chefs have won every San Pellegrino award for the world's best restaurant - Ferran Adria's four times, Rene Redzepi's Noma twice and Heston Blumenthal's Fat Duck in Berkshire once.

The board was established to advise on culinary training, research and innovation programmes internationally.
