Cardamom used in a cake that isnt too sweet

Cardamom pods can help make a delicious dessert that isnt too sweet

Cooks who find their flavour ideas for desserts are often too sugary may wish to try cardamom and yoghurt cake.

The recipe was shared with the Telegraph by professional chef Stevie Parle, who claimed that he often finds some cake too sweet.

"I think this recipe was based originally on a recipe by Claudia Roden. I've been making it for years and I’m sure it has changed, as recipes do," he remarked.

To prepare the dish, he recommended beating egg yolks and sugar until they become thick and creamy, warning that this could take ten minutes.

He then advised folding yoghurt, cardamom, lemon juice and zest and egg whites, beaten separately from the yolks, into the mixture before pouring into a greased cake tin.

Halfway through baking, he suggested sprinkling with pistachios.

Mr Parle co-created the Moveable Kitchen project and is currently the head chef and owner of the Dock Kitchen restaurant in Notting Hill.
