Use fennel in crab cakes

Fennel seeds are great in crab salads

Culinary herbs like fennel have a lot to offer the adventurous caterer - and their versatility should really not be overlooked.

Celebrity chef Hugh Fearnley-Whittingstall suggested the use of fennel as a flavour pairing with parsley in a recipe for crab cakes with chilled fennel and apple salad.

In an article for the Guardian, he explained that the combination of crisp, pan-hot crab cakes with a chilled and aniseedy-salad is a very pleasing combination.

There is no doubt that it is the inclusion of fennel that gives the salad this tasty edge.
