Herbs are essential for fish pies

The addition of culinary herbs to almost any dish offers a great way for caterers to bring their own unique twist to a meal.

This can be particularly effective when applied to old classics such as fish pie.

While these dishes may be perennial favourites with diners - particularly as they are so comforting at the colder times of the year - it can get a little dull for the kitchen worker who has to make the same thing over and over.

In an article for the Independent, chef director of Caprice Holdings Tim Hughes suggested adding parsley to the meal - acknowledging that it is a bestseller on his own menu.

However, the truly adventurous caterer could try to come up with his own twist on the meal by thinking of exciting new combinations of herbs and spices.

Simply think about what properties of one ingredient complement the other parts of the recipe.
