Ginger and chilli makes a great masala

Ginger is useful in curries

Culinary spices offer a wide range of benefits to the professional caterer, as they are useful in an incredibly diverse range of recipes.

Needless to say, they are most closely associated with curries - and these dishes give cooks a very wide scope for experimentation and innovation.

Author of the Prashad: Indian Vegetarian Cooking recipe book Kaushy Patel shared her ingredients for fenugreek leaf and banana bhajis in an article for the Guardian.

"Versatile fenugreek is used regularly in Indian cooking, as a herb (the leaves), a spice (the seeds) and a vegetable (the leaves and sprouts)," she explained.

She suggested using garlic, chillies and ginger to create a masala that can be offered alongside the food.

However, why not be a little adventurous and try coming up with a new combination of herbs and spices?

Simply think about what properties of one ingredient can add something exciting and flavoursome to the rest of the recipe.
