Braise chicken with spices

Cinnamon can be used to braise roasts

Culinary spices can be a massive boon to professional caterers - offering them a way to bring a new twist on almost any dish.

This can be particularly welcome when it comes to old favourites like roast dinners.

While this kind of meal may be a perennial favourite with diners, it can get a little dull for chefs who have to make the same thing over and over again.

One way in which this could be mixed up is by coming up with new flavourings to braise the meat with.

This is where herbs and spices can really shine - and our resident expert Chef Steve says that this is one of the reasons they are his favourite ingredients.

In an article for the Daily Telegraph, professional chef Stevie Parle recommended braising chicken with preserved lemons and cinnamon.
