Add spices to a lambs kidney dish

Ginger has a wide range of uses

Celebrity chef Nigel Slater has recommended preparing a dish of lamb's kidney bruschetta.

In an article for the Guardian, he said that the flavour can be made a little more delicate by soaking the meat in milk.

"You can cut them into thick pieces, or leave them in two halves, split horizontally," Slater remarked.

His ingredients also included a range of culinary spices - such as ginger - as well as curry powder and Dijon mustard.

Professional caterers who are thinking of adding a similar dish to their restaurant's menu would be well advised to bring their own twist to the meal.
