Vanilla needed for raspberry cake

Vanilla is a key ingredient in a fluffy sponge mix

Cooks wondering what culinary spices to use in puddings may wish to try using vanilla in a raspberry cake.

This has been suggested by celebrity chef Bill Granger, who shared the recipe in the Independent.

To prepare the sponge, he recommended creaming butter and caster sugar until light and fluffy, adding vanilla, lemon zest and milk when this is done.

He advised beating eggs into the mixture one at a time.

Flour and baking powder are then blended in a separate bowl before being folded into the batter.

The resulting dough is then poured into a greased and lined cake tin.

"Add a scattering of sweetly sharp raspberries to this simple, buttery sponge and you have the kind of cake that is as irresistible the next day as it is straight from the oven," Mr Granger remarked, adding the fruit can be scattered over the mix before placing in the oven.

Nine cookery books have been published by the chef, whose television programmes have been broadcast internationally.
