Serve a glass noodle salad with a ginger dressing

Glass noodles can be combined with a ginger dressing

Chefs looking for flavour pairings for noodle recipes could use a ginger dressing in a glass noodle salad.

This has been recommended by professional chef and food writer Alice Hart in an article for the Daily Telegraph.

Making the dressing involved rolling a pile of kaffir lime leaves into a cigar shape and cutting it into very fine pieces.

The leaves are then heated in a pan of groundnut oil with ginger and chilli, adding sugar on a high heat until caramelised.

Soy sauce and lime juice are then stirred into the mixture, which is adjusted to taste and ready to add to the noodles when they are finished.

Ms Hart's serving suggestion was to douse the salad meal with the dressing along with extra mint, scattering rice and peanuts over the dish.

In an article for the Independent, celebrity chef Bill Granger recently recommended using "plenty of ginger" in a recipe for fishcakes.
