Sea salt an interesting ice cream flavouring

Sea salt can contribute to a slightly savoury ice cream flavour

Chefs thinking of flavour ideas for unique pudding dishes may wish to try olive oil and sea salt ice cream.

Food stylist Claire Kelsey shared the recipe with the Guardian and advised using only the best olive oil.

To prepare the sweet, milk, cream and sugar have to be brought to the boil and left to cool.

The liquid is then slowly stirred into a mixture with beaten egg yolks before being transferred back to the pan to make custard.

Ms Kelsey then suggested blending with olive oil and salt, which she claimed lifts and sharpens the flavour.

"This is best straight from being churned, when the consistency is soft. If you're putting it in the freezer for later, the oil will keep it slightly hard," she remarked, adding it tastes best fresh in a cone.
