Parsley sauce garnishes gammon

Gammon can be served with parsley sauce for a classic dish

Those looking for flavour pairings for traditional dishes such as gammon may wish to try a parsley sauce.

This has been suggested by celebrity chef Nigel Slater, who shared his recipe for the meal in the Observer.

Preparing the sauce involved making a roux with equal measures of butter and flour stirred with milk until a smooth liquid is formed.

Slater advised adding two handfuls of parsley to this mixture while it is simmering.

For the ham, a large piece on the bone was boiled with apple juice, bay leaves, black peppercorns, a carrot, celery, a cinnamon stick, leeks and parsley and left for a couple of hours until the meat is tender.

A twist was recommended, for which juniper berries or a cinnamon stick were added to the ham's cooking liquor.

Simple Cooking, Slater's latest television programme, is currently being broadcast on BBC One and ten cookery books have been published by the chef so far.
