Coriander salad dresses oak smoked chicken dish

Ginger dressing is a possible flavour pairing for chicken

Cooks thinking of new flavour pairings for chicken dishes could try serving the meat with a coriander salad and ginger dressing.

This was suggested in the Daily Telegraph by professional chef Diana Henry, who prepared the chicken in a brine of honey, salt and pepper.

To oak-smoke the meat, she advised lining a wok with tin foil, topping with wood chips then arranging the produce over this on a rack before covering with a lid or more foil.

Ms Henry's instruction for the ginger dressing involved whisking vinegar, lime juice, groundnut oil, ginger, garlic, chillies and fish sauce together, so the resulting sauce has a hot, sweet and sour taste.

A single peeled mango was recommended for the salad, with leaves and coriander tossed together to serve.

Red and Waitrose Food magazine regularly print Ms Henry's recipes and she also presents daily television show Market Kitchen on the Good Food Channel.
