Mix spices into a salad

Culinary spices present professional caterers with such a wide variety of possibilities.

It is easy to settle into a routine of making the same dishes over and over, but by experimenting with different combinations of herbs and spices, coming up with new taste sensations is not the most difficult of tasks.

Our resident expert Chef Steve says that the scope for innovation offered by herbs and spices is the reason they are his personal favourite ingredients.

Celebrity chef Hugh Fearnley-Whittingstall suggested preparing a vegetarian-friendly spelt salad with squash and fennel.

Writing in an article for the Guardian, he also included the likes of garlic, pepper and parsley in his ingredients for the dish.

However, the truly adventurous chef will not follow this kind of direction to the letter.

Try thinking about how you can really bring out the natural flavours of other ingredients with different flavour pairings of herbs and spices.
