Rosemary is the perfect flavouring for duck

Culinary herbs present a great range of benefits to professional chefs, not least of which is the ability to add something new to almost any meal.

Indeed, our resident expert Chef Steve says this kind of versatility is precisely why - along with spices - the ingredients are among his absolute favourites.

However, one of the key uses for herbs is as use in flavouring for traditional meat-based dishes.

Celebrity chef Nigel Slater suggested preparing a plate of duck and dates with walnut.

Sharing his recipe in an article for the Guardian, he added that the presence of dates and cucumber in the meal makes for a sweet and refreshing alternative to the standard roast dinner option.

However, adventurous chefs could easily bring their own unique twist to the meal by adding new combinations of herbs and spices.

Rosemary is a classic for duck - but don't be afraid to really let your imagination run wild.
