Mustard is great with pigs liver

Mustard is very useful for chefs

It can be a challenge for professional caterers to come up with something truly distinctive to set their restaurant's menu apart from the crowd.

However, one positive approach could be to try your hand at some ingredients that are particularly underused.

Pig's liver is one example of an underused offal dish - and it can be treated like many other livers. As is the case with many pork dishes, it works very well with apple sauce.

A recipe featured in the Independent suggested serving the finished dish spread with wholegrain mustard.

Our resident expert Chef Steve says that one of his favourite ways to bring something new to almost any dish is to try adding some unusual combinations of culinary herbs and spices.

So why not follow his lead and try being really adventurous? Simply think of what properties of one herb or spice can complement the best aspects of another.
