Make some sweet buns with cardamom

Spices can be added to desserts

Culinary spices are perhaps most closely associated with exotic curry dishes - but they have a wide range of other uses to professional chefs.

For instance, in an article for the Independent, celebrity chef Bill Granger recommended adding cardamom to custard and coconut buns.

This kind of versatility is exactly why our resident expert Chef Steve says that herbs and spices are his absolute favourite ingredients.

Granger acknowledged that the taste of his dessert option is a little out of the ordinary.

"The cardamom flavour is quite strong, so reduce it, or even leave it out altogether if you prefer a plain sweet bun," he commented.

This just goes to show that experimentation is one of the most interesting things about being a chef.

So don't be afraid to bring a spirit of innovation to your restaurant's menu.

Simply try adding unusual ingredients to recipes to see what you can come up with.
