Cinnamon is useful in stick and ground form

Co-creator of the Moveable Kitchen and the owner and head chef of the Dock Kitchen in Notting Hill Stevie Parle has underlined just how much cinnamon has to offer caterers.

Many culinary spices are indispensible to the professional chef - and indeed, our resident expert Chef Steve says that he always turns to them as they are so highly versatile.

However, in an article for the Daily Telegraph, Mr Parle explained why he finds cinnamon particularly appealing.

"It has a deep, earthy, sweet smell that reminds me as much of coconut broth and travels in the East as it does of Christmas at home with mulled wine and brandy," the expert commented.

This could mean that it is best to stock up now, as it may be in particularly high demand at this time of year.

Mr Parle added that it can be quite difficult to grind up cinnamon sticks into a fine powder, so it is very advisable to keep both in stock.
