Biryani could be offered as a Christmas dish

Chillies can be festive

With the festive season just around the corner, caterers up and down the country will undoubtedly be getting ready to prepare abundant quantities of traditional roast dinners.

This has long been a staple of the Christmas celebrations - and it remains a perennial favourite among diners.

However, it could be a good idea to be a bit adventurous and offer non-traditional options as part of a seasonal menu.

Author of Prashad Cookbook: Indian Vegetarian Cooking Kaushy Patel suggested preparing a vegetable biryani recipe.

In an article for the Guardian, she explained that it may not be as unsuitable as it first sounds.

"Biryani is a Prashad family Christmas special," she commented, adding: "The name comes from the Persian and means fried or roasted."

The masala for the dish involved a selection of culinary spices - specifically chillies, garlic and ginger.

Professional caterers could always be more adventurous and come up with their own flavour pairings.
