Why not serve squid with a watermelon salad

Chefs looking for new flavour pairings for seafood recipes could try serving squid with Thai basil watermelon salad and chilli caramel.

The dish comes from the Restaurant, Bar & Brasserie on the eighth floor of London's OXO Tower and head chef of the venue Deon Jasen shared his ingredients for the meal in the Daily Telegraph.

Preparation involved heating chilli flakes, fresh chilli, lime, sugar and water on a stove until they have combined into a liquid.

This chilli caramel mixture is allowed to set and the watermelon salad required dicing the fruit and stirring together in a bowl with the culinary herbs basil and coriander in addition to sesame seeds and spring onion.

Next, chilli, fish sauce, lime and sugar are poured over the salad, which is topped with the barbecue-cooked squid and caramel chilli.

Celebrity chef Nigel Slater recently recommended cooking the seafood meat in Chinese five-spice seasoning in an article for the Observer.
