Parsley garnishes cauliflower and butter bean salad

Flavour a bean salad with parsley

Culinary herbs such as parsley can be used as a garnish in a simple vegetarian salad recipe suggested by Stevie Parle.

The celebrity chef revealed his method for preparing a cauliflower and butter bean salad in the Daily Telegraph.

He noted the choice of either beans or vegetables can be varied to taste in this dish, adding he often uses romanesco instead of cauliflower.

First, the beans are gently heated in a pan of water and garlic, before being seasoned when cooked.

Cauliflower is boiled for around five minutes and Mr Parle recommended waiting until they are soft but remain slightly crunchy.

Garlic, salt and parsley are combined with lemon juice and oil, before being mixed with the cooked vegetables and beans.

The finished dish is then served with sprinklings of lemon zest and parsley.

Chef patron at Murano restaurant Angela Hartnett recently recommended serving parsley as a garnish for a pork chop recipe published in the same newspaper.
