Horseradish key to smoked mackerel dish

Horseradish is a key ingredient for mackerel

One flavour idea for a smoked mackerel dish is to serve it with sweet potatoes and beetroot, with horseradish as a key ingredient.

This has been suggested by chef patron at Murano restaurant Angela Hartnett, who explained the fish is well-priced and very tasty.

Preparation involved cooking sweet potato on a hot baking tray with crushed garlic and seasoning until the ingredients are soft.

While this is in the oven, beetroot is fried with thyme in a pan of oil.

Red wine vinegar is added to this along with some water and the mixture is left to simmer.

When all the food is cooked, it is allowed to cool and mixed together with flaked mackerel and served with parsley and horseradish.

Presenter of the Good Food Channel's Market Kitchen show Diana Henry recently suggested the use of horseradish as an alternative to radish in order to give another mackerel recipe an autumnal flavour.
