Cumin and turmeric can flavour a lamb biryani

Individuals wondering what Indian spices to incorporate into curry recipes could try flavouring a lamb biryani with cumin and turmeric.

These ingredients feature in celebrity chef Bill Granger's recipe for the dish, which he shared in the Independent.

He described the meal as "a hearty favourite, perfect for this chillier time of the year, but simplified so you could easily make it every other night if you wished".

Preparation involved coating lamb in cumin and turmeric as well as curry powder before adding it in batches to oil heated in a casserole dish over a medium heat.

Onion, garlic and ginger are then introduced to the mixture until cooked and this is repeated with rice.

Stock is poured into this and the dish is transferred to an oven.

In another article for the Independent, professional chef Reza Mahammad recently recommended the use of cumin and chilli powder to make a Rajasthani lamb curry.
