Cloves required for a bacon and quince recipe

Bacon can be served with quince for a unique flavour pairing

Honey roast bacon with quince is one flavour pairing that uses cloves as a key ingredient.

Mark Hix, professional chef and owner of the Hix Oyster & Chop House, shared his recipe for this dish in the Independent.

"A joint of bacon makes a great cold cut as a starter, especially with a fruit like quince," he commented.

Preparation involved scoring bacon fat with a knife and placing cloves inside the cuts.

Honey is spooned over the meat after it is put in a dish lined with foil.

After placing in the oven, it is necessary to remove and baste occasionally and add water to the honey to prevent it from burning.

Mr Hix's serving suggestion was to slice meat on to plates and garnish with shredded quince.

The chef may be a fan of this particular ingredient, as he also recommended using it to stud a joint of ham to prepare a ham and dill pickle sandwich.
