Chilli mayonnaise makes a luxury burger

Mix chillies with mayonnaise to create a decadent burger

Chefs looking for flavour pairings to incorporate Asian spices with burgers could try serving them with chilli mayonnaise. 

Richard Kirkwood of Covent Garden's J Sheekey restaurant and oyster bar shared his ingredients for the dish in the Daily Telegraph.

A shrimp and scallop burger was prepared by mixing the fish in a bowl with chillies, parsley and spring onion.

The ingredients are shaped into patties, seasoning with salt, pepper, lemon juice and green Tabasco and fried.

Chilli is cooked in oil to make the condiment and the spice is mixed with standard mayonnaise, lemon juice and parsley.

Mr Kirkwood's final serving suggestion was to place on a toasted bun with additional garnishes to taste.

Earlier this year, ambitious grillers in California created the world's largest commercially available burger.

It weighed 771lbs and was made from a 110lb bun, 20lbs of onions, 12lbs of pickles and 30lbs of lettuce, beating the previous record-holder, which was 595lbs.
