Caraway flavours carrot puree

Why not serve pita bread with carrot puree

Cooks looking for flavour ideas for pita bread dishes could try preparing a carrot puree with caraway and feta.

Celebrity chefs Sam and Sam Clark shared this recipe from their Casa Moro cookbook with the Observer.

Preparation involved brushing the pita bread with butter as it is being heated in a pan, then cutting into the required shapes and baking.

Carrots are then tossed with oil, salt and pepper in a roasting tin, covered with foil and also placed in the oven until the vegetables are tender.

When they are removed, they are mashed by hand or in a blender and stirred with caraway and mint.

The chefs' final serving suggestion was to crumble feta over the puree, before drizzling olive oil and scattering with mint.

In an article for the Babble blog earlier this year, Angie McGowan recommended serving pita with chopped vegetables and hummus made with cumin and paprika.
