Lamb chops really benefit from rosemary

With the Olympic Games coming up and the Queen's Jubilee just around the corner, there is no doubt a wave of patriotism is riding high throughout the UK.

Caterers could take advantage of this mood by preparing traditional British dishes for their diners.

In an article for the Guardian, head chef at Dinner by Heston Blumenthal in London Ashley Palmer-Watts suggested lamb chops.

"This recipe is spring on a plate," he commented, adding: "British produce is incredible in the springtime and each ingredient in this dish really makes the most of that."

Mr Palmer-Watts recommended the use of pepper, mint and rosemary when preparing the meal, but professional chefs could really take advantage of this opportunity to let their creative flair shine here.
