Chilli and squid can make a great light bite

Chilli works very well with squid

When thinking of new things to add to the light bite section of the menu, there is no reason why caterers should not come up with a range of inspirational recipes that are just as distinctive as their main course offerings.

In an article for the Guardian, celebrity chef Nigel Slater suggested grilling squid then tossing them in a pan with chillies.

This could easily become a stand-out dish and professional caterers could add their own twist to the meal by coming up with new combinations of culinary spices.
