Use garlic to create a warming onion soup

Culinary herbs are a vital ingredient in French onion soup

One of the benefits of culinary herbs is the fact that they bring out the natural flavours of many other ingredients.

This is a quality that is not to be underestimated and is worth applying to starter offerings, rather than holding back for the main course.

For instance, Felicity Cloake - chef and author of Perfect: 68 Essential Recipes for Every Cook's Repertoire - suggested using garlic and thyme in the preparation of French onion soup.

She told the Guardian the meal is: "Rich and warming, this is a dish to make while the last gasp of winter is in the air."

Making cheese toasts as a side serving was also advised, with these given a particularly intense flavour by rubbing them in garlic.

Thyme is stirred into the mix with vinegar and cider, after the onions have been caramelised in butter and before the remaining ingredients have been allowed to simmer.
