Take inspiration from an award winning chef

A mackerel based recipe has won a prestigious industry award

When looking for new ideas to help build an inspirational recipe, chefs could look to the successes of industry awards.

Chef Steve - McCormick's resident expert - says judging at such events is one of his key professional inspirations.

While many caterers will not necessarily have the opportunity to participate in this way, they can still look to the offerings as a potential avenue to prompt recipes for their own menus.

Restaurant Associates' head chef at its Merrill Lynch contract in London Simon Webb has been named the 2012 British Culinary Federation Chef of the Year.

The winning meal incorporated grilled Cornish mackerel, salt-baked beetroots, pickled radish, with an option of crab and coastal leaves followed by slow cooked rump cap of suckler beef.

"We have an outstanding winner in Simon Webb this year, who will undoubtedly be a name to watch in the future and go on to reach new culinary heights," commented president of the British Culinary Federation Peter Griffiths.
