Roast a lamb with fennel

Roast meals can be made to stand out with herbs and spices

Culinary herbs are absolutely essential for chefs who wish to make sure their traditional offerings stand out in an overcrowded market.

Meals like roast dinners are a staple and regularly in high demand, but caterers can draw diners to their restaurant by preparing something slightly different.

One of the key benefits of culinary spices and herbs are their ability to bring out the natural flavours of other foods - so it really makes sense to let your imagination run wild with these ingredients.

In an article for the Guardian, celebrity chef Nigel Slater recommended pressing fennel seeds into the surface of a lamb joint before cooking it.

Rubbing oil over the flesh - in addition to lashings of salt and vinegar - was recommended prior to introducing the fennel.

Adding garlic to the roasting tin also works wonders on the finished product, but do you have any of your own flavour pairings for roasts?
