Parsley can make a hearty salad

Parsley can be a key ingredient in a salad

Culinary herbs can be used to make a salad that is more filling than the light bite or starter option it is usually associated with.

Chef Steve - McCormick's resident expert - says one of his favourite things about the ingredients is their versatility and this is demonstrated in the ability to contribute flavour to such a meal.

Celebrity chef Hugh Fearnley-Whittingstall recommended assembling a salad with Scotch broth for a "hearty" offering.

He said that beef or chicken could also work well and preparation involved lightly cooking shredded lamb until it only just starts to turn brown.

The salad is made principally from cabbage and parsley, stirring in the meat and seasoning according to taste.

A dressing of rapeseed oil, white wine vinegar and brown sugar was also recommended.
