Stuffed pepper dish makes leftover chicken scrumptious

A stuffed pepper dish that includes various different spices is ideal for using up the leftover meat after a roast chicken dinner, it has been suggested.

Writing for Yumsugar, Lauren Hendrickson said poblano chilies are a great base for a dish that makes use of what can otherwise be unappealing chicken.

Oregano, cumin, garlic and salt will all be needed for the recipe, which involves slicing the chilies open lengthways and stuffing them with a mix of the chicken, brown rice, extra-sharp white cheddar cheese, tomatoes and onion.

"While the peppers roast, the filling can be quickly prepared by caramelising onions and garlic," said Ms Hendrickson, adding the meal makes leftovers "spicy and scrumptious".

Spices can be used to add flavour to a wide variety of dishes and Rita Demontis of the Canadian QMI Agency recently noted they are ideal for giving a kick to any new, healthy recipes people are trying out in a bid to eat better in 2011.
