Spices a childhood fascination for up and coming chef

McHales talks about spice interest

Scottish chef Isaac McHale has spoken about his lifelong interest in spices and other food stuffs, admitting that food consumed his thoughts even as a youngster.

Speaking to the Scotsman, Mr McHale said that before he hit ten, he could be seen wandering the aisles of his local Indian supermarket, as he was fascinated by the wide variety of spices and other ingredients on offer.

He admitted to using all of the spices at once until he developed a more sophisticated palette and learned which ingredients to use with which kinds of dish.

"I would go in and stare at all these spices I didn't know the names of. I used to buy every single thing and throw them all in at once," he stated.

McHale is making big waves in the world of cooking and was recently voted one of the chefs to watch by prestigious magazines Vogue and Wallpaper.

Meanwhile, executive chef at the Leela Kempinski Kunal Kapoor recently told the Times of India that a good attitude, as well as knowledge of spices and ingredients, is essential for becoming a professional cook.
