Plenty of spices used in fried okra recipe

Okra is brought to life with Indian spices

People who enjoy unusual flavour pairings may want to try creating one dish that combines Asian spices with a southern US vegetable.

A recipe for fried okra with Indian spices and hot tomato relish has been posted the on the Global Herald and it uses a number of interesting flavours.

Coriander seeds, Fennel seeds, Cumin seeds and a clove are toasted before being ground together and combined with a batter mixture made from two types of flour, buttermilk and a Serrano chilli.

This is used to coat the okra, which is then deep fried until golden and crisp.

Brown mustard seeds, Cayenne pepper, ground turmeric and plenty of tomatoes are all combined with salt, garlic and sugar to create the accompanying relish.
