Summer baking extolled by Hugh Fearnley Whittingstall

Baking is great fun - any child will tell you that. And during the summer months it takes on a whole new persona as light puddings, savoury treats and fruity delights replace the heavier, custard-laden winter puds we all know and love.

As casseroles make way for salads, sticky toffee puddings make way for American-style cheesecakes and fluffy, fruit-filled meringues.

But the key to successful summer baking is the same as its winter counterpart - getting the right culinary spices and herbs and following the recipes exactly.

Baking requires patience and the results are less immediate, but the time you commit to it pays off tenfold when you are tucking into a chocolatey delight.

Celebrity chef Hugh Fearnley-Whittingstall is a big fan of summer baking and recently put forward some great recipe ideas in the Guardian.

He suggested some interesting flavour pairings, including cheese and onion wholemeal scones, a Bakewell tart with a twist and a chocolate cake infused with coffee - all of which are perfect for summer dinner parties or afternoon teas on the patio.
