Herbs and spices can Jazz up low budget meals says cookery writer

Using culinary herbs and spices is a great way to "jazz up" simple foods, according to cookery writer Kathryn Hawkins.

Given the current economic climate, the author of over 20 cookbooks said that herbs and spices allow low-budget cooking to excel.

"I think everybody is using more herbs and spices," the former Women's Own magazine editor explained, adding: "It can make cheaper food like beans and pulses taste absolutely out of this world, by chucking in a few Indian spices or things like that."

Ms Hawkins went on to explain that there were a number of basic seasonings that beginners can acquaint themselves with, depending on their favourite type of cuisine.

"If you choose the Mediterranean get familiar with garlic, basil and oregano, and start adding fennel seeds, things like that," she said.

"With Indian spices, there are so many different varieties; even with things like cardamom, cumin and mustard seeds, there's not just one type," she said, concluding: "So definitely be area-specific and then read up around that subject."
