Herbs and spices add beauty and luxury to recipes says top chef

Culinary herbs add "beauty and luxury" to recipes, according to top chef and cookbook author Yotam Ottolenghi.

Speaking with NPR about his latest cookbook Plenty: Vibrant Recipes from London's Ottolenghi, the chef was asked about his recipe for burnt eggplant with tahini studded with pomegranate seeds and seasoned with garlic, black pepper and parsley.

"That's a fantastic lunch," he explained, saying the secret in the preparation was fire.

"It is something quite magical, because it carries the smoke in it like nothing else does," he commented.

Mr Ottolenghi said that most of his dishes are casual and that he relies on herbs and spices to dress them up.

"For me, every food can be special. I always think you can add beauty and luxury to a dish by adding lots of herbs to it," he explained.

"Once you've done that, you can make the simplest things in the world, and still everyone thinks you've gone to the longest of efforts, but actually it's as simple as that."
