Free range eggs in surplus says farming union

Farmers are currently experience a surplus in free range eggs

Chefs looking to use their culinary herbs in delicious omelettes will benefit now that free range eggs are in surplus, according to Kelly Watson of the National Farmer's Union.

Speaking with the BBC's Farming Today podcast, Ms Watson revealed that the overabundance of free range eggs has led to many of them being packaged in boxes for caged-hen eggs.

"The egg industry in the UK has invested some four million pounds in getting itself ready for when we see the end of conventional cages, and basically the market is out of kilter at the moment," she explained.

Home cooks looking to make use of these excess eggs could whip up Gordon Ramsey's herb omelette.

Writing in the Times he suggested that cooks freshen up their omelettes with a bay leaf, black peppercorns and parsley.

Additionally, home cooks can throw in smoked haddock fillet, mature cheddar cheese and single cream to make the celebrity chef's Arnold Bennett Omelette.
